Mystery muffin/trail bar
July 11, 2008 on 11:47 am | In Food | No CommentsSam and I cooked something up today - I’m jotting down ingredients while I remember. We’ve only tasted the mix pre-bake, so final review is pending. Very tasty mix, though!
Heat together:
Karo syrup
honey
butter (Brummel and Brown yogurt kind)
brown sugar
Mix together:
Kashi Cocoa Beach granola
Any other granola with berries and such
Package of instant oatmeal any flavor that suits you (we used cinnamon roll)
Raisins - three 3 yr old handfuls
1 cup flour
1 tsp baking powder
1 tsp salt
Stir in heated ingredients. Smush into a tin or onto cookie sheet. Bake at 350 for however long you feel makes sense! I didn’t measure any of the above ingredients, nor did I work from a recipe. The amounts are my recollection of what I dumped into the bowl. Chomp at your own risk!

Trail snacks
March 7, 2008 on 7:52 pm | In Food | No CommentsCut out the green stems from strawberries and fill the resultant hole with chocolate. Freeze overnight. Enjoy on the trail!
Slice a banana lengthwise, spread on Nutella, insert popsicle stick, freeze overnight. Enjoy!
After-hike smoothie!
May 9, 2007 on 6:18 pm | In Food | No CommentsNothing is better than taking off your hiking boots and putting on slippers… Ok, perhaps a cold, filling smoothie would be great! Here’s one we made today with stuff you probably already have at home:
1 cup milk
1 banana (apple bananas are fine! we used two of these)
1/4 cup peanut butter (we like the organic kind that is really peanuty)
2 tbsp honey
1 cup Cheerios (Honey Nut is really good for this! It’s our “protein powder” - ha ha! really just to thicken it a tad)
1 cup crushed iceMakes 2 8oz servings - 373 cal each serving
Blend it up and enjoy! See if it tastes like the famous Kailua Monkey from Lanikai Juice. We’re totally hooked on that!!!
